We are big foodies over here, finding ourselves making any and everything. Aidan is very particular about his food though, so he isn’t as experimental as we are. But he is trying new things lately so, kudos to him for trying.
Last night was movie night for the fam bam. Now, it’s normally on Fridays, but we were having difficulty choosing a movie for this week. I wrote about our challenges on social media, essentially venting because Hammy didn’t want to watch the latest installment of the Fast and Furious franchise, Fast X. He was adamant that he was not feeling that particular film.
I took to social media to vent my frustration at his stubbornness. Like, c’mon, he has seen all the other ones, it’s only right to watch the new one? Right?
Yes, I am right.
So, I asked my audience for assistance with convincing him to watch the film. They did not disappoint. And I used their arguments to put together a presentation, yes, a presentation to bring it all home.
Many suggested that we take turns in choosing the films, which is something that we have done in the past. But every single time it gets to Hammy, he is like, “whatever y’all want to watch is good with me.”
Like, the hell yo? So, then we feel bad for taking his choice, so we did random choice generators and that worked for the most part and even chose Fast X this time around, but he was like, “hell no.”
Let me tell you his reasoning: the films are outrageous and unrealistic af with way too many missing plot lines.
He is absolutely correct. But I also think that is what makes them so great and entertaining.
Without giving y’all the whole bit of our presentation to Hammy, we promised him that he could choose the next two movies with no complaint from us and choose the movie snack for Fast X, also with no complaint from us.
He chose, breakfast for dinner.
Not much of a complaint from me, but I thought he was gonna choose something we could order, not have to cook.
Ugh.
But, no complaints, remember?
So, we did pecan waffles, three different kinds of sausage (regular sage sausage, philly cheesesteak sausage, and jalapeno cheese sausage), bacon, and eggs. Came out pretty tasty though ugly in presentation. And a bit charred…oh wells. Still edible.
Hammy was satisfied with his brinner. I was satisfied that we got to watch the film. And then deflated with that funky ass cliffhanger at the end. I won’t provide spoilers on this post. That will be for another day and another one of Tiffy’s Bad Movie Reviews/Recaps, where the movies aren’t necessarily bad but the review is.
Now, normally I would provide a recipe for our meals, but I don’t really have one. The waffles we typically make from scratch, but I opted for a Pearl Milling Company (formerly Aunt Jemima) box mix. Fun fact, Hammy’s aunt was one of the Aunt Jemima women. Wild, right. And the sausage was already…uh sausage, so no recipe there. Same with the bacon.
Nothing spectacular going on with the eggs. I mean, we add a little milk for fluff. But other than that, underwhelming in terms of providing some sort of recipe, just make the darn eggs, y’all.
But I do have some kind of recipe for y’all this week: Salmon Rolls.
Now, these were so good, but they are unhealthy as hell. And filled with so much cheese it backed us up like traffic.
I saw Salmon Rolls on social media a while back but couldn’t remember how to make it. So, I was winging it on this one. And it came out well. I am going to share with y’all what we did and maybe y’all will want to give it a shot.
Let’s get after these rolls, shall we?
Now, don’t expect a proper recipe card here. I just wing shit on a regular over here. And this won’t be no different.
You will need:
salmon, your choice
seasoning of your own choosing, we used some seafood magic seasoning
butter or olive oil
Remove the skin. Cook in skillet or oven, or however you want to cook your salmon. Season to your liking. Put to the side to cool. Chop into chunks. Don’t shred them up into tiny pieces, while that still works, it’s aesthetically displeasing. Just sayin’.
For the artichoke spinach spread:
artichokes, canned and quartered, drain them and chop them even smaller
sour cream, 1/4 cup
mayo, 1/4 cup
1 garlic clove
2/3 cup of finely shredded parmesan cheese
1/2 cup mozzarella cheese
pepper, sprinkle until the ancestors say, “chill”
some spinach, you can use canned or frozen, but drain them well. we used fresh and then cooked them down into a pan with a little olive oil
8 ounces cream cheese, softened
We ended up doubling the artichoke spinach spread (which is actually just dip) cause we were unsure if we would have enough to spread around and if we happened to have extras we would just eat it as a dip with chips. I didn’t use all of the artichokes cause they be salty and I was already salting the salmon, the alfredo, the noodles…
Now, surely there’s some fancy instructions that go here, but we just put all that in a bowl, mixed, transferred to a baking dish and baked on 350 degrees for like 15-20 minutes, then let cool while we did everything else.
For the lasagna noodles:
lasagna noodles, whatever brand you like
add about 8-10 sheets to boiling salted water. Cook according to package directions. I thought it was better to have too many sheets than too little. And I be breaking them, so…
For alfredo:
1/2 cup butter
1 1/2 cups heavy whipping cream
2 teaspoons garlic
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups parmesan
in skillet, add butter and cream to simmer for a couple of minutes, then add the garlic and seasonings. stir a bit and then add the cheese. bam! you done. I doubled this because I felt like I doubled everything else, including using a lot of salmon but I found out I didn’t actually need all of that alfredo.
Alright, assembly time.
Put a dollop of alfredo at the bottom of a deep dish casserole dish. spread it around to cover the bottom. On a cutting board or large sheet of sprayed with pam piece of foil, lay out a lasagna sheet. Layer on some artichoke spinach spread, top with salmon, and then roll it up. Place your roll into the pan. Continue until you have filled your pan with rolls. Top with more alfredo sauce, parmesan cheese, and pop it in the oven for about 20 minutes. I was winging it on the time to bake cause everything was already damn cooked.
Take it out, let it cool. Serve.
And done.
